This recipe is a relatively recent find from the Taste Love and Nourish blog and I have been meaning to try it for the past few days but was missing celery (yes, I know, I could have made it without celery). I went shopping on Monday and made sure I bought celery; not a typical staple in our house. Mind you, I couldn't remember any other of the ingredients, so it was fingers crossed last night when I decided to give this one a go as I'd left myself enough time to make it.
Once again I had my camera down in the office, so these photos were taken with the phone but processed in Lightroom.
I served this with brown rice and diced avocado. Yum! One I will be making again.
