I did add some sliced kalamata olives as well as some extra tomato paste to give it just a little more flavour. I didn't have enough dried oregano leaves so topped it up with dried Italian herbs. I also added some fresh oregano from my herb garden - which is coming along nicely!
This is a good quick pasta dish and with plenty of leftovers as it serves 4 people, and I have successfully frozen this for another day. Oh, I also make up some cashew "cheese" as we don't eat dairy at home. The recipe can be found here. It's a good way to get in some great vitamin B too.
The colours in the photo aren't as great as I'd like. I need to work more on night time/artificial light photography.
