Ok, I have to admit, this is one of my favourite recipes and I have to often resist the urge to make these yummy brownies. They are just so quick to make, and taste great. I try to save baking them for a special occasion, otherwise they will just get eaten all too quickly if left in our cupboard.
I found the recipe on the back of a Nestle Baking Cocoa tin (never to be seen again), so I will reproduce it here.
Ingredients:
- 150g Butter (I use Nuttelex Olive Light)
- 1 Cup Nestle Baking Cocoa
- 4 Eggs (free range)
- 2 Cups caster Sugar
- 1 tsp natural vanilla essence
- 3/4 Cup plain flour (I use wholemeal)
- 1 tsp baking powder
- 1 cup of roasted nuts - any type would work, I usually use walnuts
- Icing sugar or more Baking cocoa to dust at end
Method:
- Preheat oven to 160 degrees. Line base of a 27 cm X 18 cm X 3 cm tin with baking paper.
- Melt butter (or whatever spread you are using) and sitr in the cocoa. Allow to cool slightly. Beat in the eggs. Stir in sugar and vanilla.
- Sift flour and baking powder together. Add to mixture and stir until thoroughly mixed. Stir through the roasted nuts. Turn mixture into tin.
- Bake in preheated oven for 45-50 minutes or until just firm when pressed in the centre. Leave for 20 minutes then turn onto a rack. When cool cut into bars.
Dust with extra nestle baking cocoa or icing sugar if desired and serve with yoghurt.
